Walk down almost any street in Tanzania in the evening and you will hear it: the sizzle of a hot pan, the tap of eggs being cracked, and the smell that makes people stop walking. Chipsi mayai is more than a meal; it is part of everyday life. And the best part is that you can make it at home, in one pan, in about 15 minutes.
This guide shows you how to make chipsi mayai at home step by step, how to make the kachumbari that goes with it, and the small mistakes that stop it from turning out like the one from your favourite street vendor.
What is chipsi mayai?
Chipsi mayai is a Tanzanian chips omelette. The name comes from Swahili: chipsi means chips and mayai means eggs. Hot fries are mixed into beaten eggs and cooked in a pan until the eggs hold the chips together, a bit like a thick, crispy omelette. Many people also call it zege or chips mayai.
It is one of the most loved street foods in Tanzania, sold from roadside stalls in Dar es Salaam, Arusha, Mwanza and almost every town in between. It is filling, cheap and quick, which is why people eat it for lunch, dinner or a late-night snack.
What do you need to make chipsi mayai?
This recipe makes 2 portions.
Ingredients
- 400 g frozen fries (about a fifth of a 2 kg pack)
- 4 eggs
- 1 small onion, finely chopped (optional)
- 1 small tomato, finely chopped (optional)
- Salt and black pepper
- Oil for frying, plus 1 tablespoon for the pan
Equipment
- A deep fryer, a deep pot, or an air fryer for the chips
- A non-stick frying pan, about 20 to 24 cm wide
- A flat plate the same size as the pan, for flipping
How do you make chipsi mayai step by step?
Step 1: Fry the chips
Heat the oil to 175°C and fry the frozen fries for about 3 minutes, until golden and crisp. Do not thaw them first; frozen fries go straight into the oil. Drain on a paper towel and sprinkle with a pinch of salt. In an air fryer, cook at 200°C for 12 to 15 minutes, shaking halfway.
Straight cut, 10-12 mm, and ready in about 3 minutes. No peeling, no cutting.
Order on WhatsAppStep 2: Beat the eggs
While the chips cook, crack the eggs into a bowl. Add a pinch of salt, a little black pepper, and the chopped onion and tomato if you are using them. Beat with a fork for about 30 seconds until smooth.
Step 3: Add the chips to the pan
Heat 1 tablespoon of oil in the frying pan over medium heat. Add half the hot chips and spread them into an even layer that covers the base of the pan.
Step 4: Pour in the eggs
Pour half the egg mixture over the chips, tilting the pan so the egg runs into the gaps. Cook for 2 to 3 minutes without stirring, until the bottom is set and lightly golden and the top is only slightly runny.
Step 5: Flip and finish
Slide the chipsi mayai onto the plate, place the pan upside down on top, and turn it over so the uncooked side faces down. Cook for another 1 to 2 minutes. Repeat steps 3 to 5 with the rest of the chips and egg for the second portion.
How do you make kachumbari to serve with it?
Kachumbari is the fresh salad that makes chipsi mayai taste complete. It takes about 5 minutes:
- Thinly slice 2 ripe tomatoes and 1 red onion.
- Add a little chopped fresh chilli and a handful of chopped coriander (dhania).
- Season with salt and the juice of half a lime (ndimu), then mix.
Serve it on the side or on top, with pilipili (chilli sauce) and tomato sauce.
What are the most common chipsi mayai mistakes?
- Using soft or cold chips. Fry the chips just before they go into the pan. Crisp, hot chips give the best texture. Our tips for crispy chips explain why.
- Thawing frozen fries first. Thawed fries soak up oil and turn soggy. Always cook from frozen.
- Too much heat. High heat burns the bottom before the egg sets. Medium heat cooks it evenly.
- A pan that is too big. In a large pan the egg spreads thin and breaks when you flip it. A 20 to 24 cm pan is ideal for one portion.
- Stirring the eggs. Leave it alone for the first 2 minutes so it can set into one piece.
What can you add to chipsi mayai?
| Variation | What to add | Good for |

| Veggie | Onion, tomato, green pepper | More flavour and colour |
| Spicy | Fresh chilli and a pinch of curry powder | People who like heat |

Frequently asked questions
Is chipsi mayai the same as zege?
Yes. Zege is another popular name for chipsi mayai in Tanzania. Both mean chips cooked together with beaten eggs into a thick omelette.

Use 2 eggs for every portion of chips (about 200 g). For a bigger appetite, use 3 eggs and a little more chips.
Can I make chipsi mayai with frozen fries?

What do you eat with chipsi mayai?
In Tanzania it is usually served with kachumbari (a fresh tomato and onion salad), pilipili (chilli sauce) and tomato sauce. Some people add grilled sausage or mishkaki on the side.
