Sweet potato fries are everywhere on social media: bright orange, sprinkled with spice, often called the healthier choice. In Tanzania, viazi vitamu are cheap and loved, so it is natural to wonder: should we be making fries from them instead? The answer is more interesting than "yes" or "no".

In Tanzania, viazi vitamu (sweet potatoes) are widely grown and often boiled or roasted, while chips are almost always made from Irish potatoes (viazi mviringo). Here is how they compare as fries.

A little, mainly because of vitamin A. Orange-fleshed sweet potatoes are one of the richest food sources of beta-carotene, which the body turns into vitamin A. The International Potato Center has promoted orange-fleshed sweet potato in East Africa for this reason. But calories and fat depend mainly on frying. Air-fried regular fries can be a lighter choice than deep-fried sweet potato fries. More in are frozen fries healthy?

Why are sweet potato fries harder to make crispy?

Sweet potatoes have more sugar and moisture and a different starch. The sugar browns fast, so the outside darkens before it crisps, and the inside stays soft. Tips if you make them at home:

Why are regular fries better for everyday chips?

Irish potatoes with high dry matter give the classic chip: crisp, golden and fluffy. They brown evenly, hold up under toppings and in chipsi mayai, and cook fast from frozen. That is why almost every chips spot in Tanzania uses them. Read why Southern Highlands potatoes make great fries.

Which should you choose?

How are sweet potatoes eaten in Tanzania?

Viazi vitamu are a common, affordable food across Tanzania. They are usually boiled or roasted and eaten for breakfast with tea, or as a side with beans and stews. Roadside vendors roast them over charcoal. Orange-fleshed varieties, rich in beta-carotene, have been promoted for their nutritional value, especially for children. As fries, sweet potatoes are less common, but they are becoming more popular in cafes and restaurants as a "something different" option.

How do you make sweet potato fries at home?

  1. Peel 2 medium sweet potatoes (or scrub them and leave the skin on).
  2. Cut into thin, even sticks, about 7 to 8 mm.
  3. Soak in cold water for 20 minutes, then dry very well.
  4. Toss with 1 tablespoon of cornflour, then 1 tablespoon of oil.
  5. Spread in a single layer and bake at 200 to 220°C for 20 to 25 minutes, turning once, or air fry at 200°C for 12 to 15 minutes.
  6. Season with salt and paprika, or cinnamon and a pinch of sugar for a sweet version.

Watch them closely at the end; the sugar means they go from golden to burnt quickly.

Which has a better effect on blood sugar?

Both are starchy foods that raise blood sugar. Sweet potatoes are often described as having a lower glycaemic index than white potatoes when boiled, but this changes a lot with variety and cooking: baking and frying can raise it. Eating either with protein, fibre and vegetables slows the rise. If you manage diabetes, follow your health worker's advice on portions. The WHO diabetes fact sheet has general guidance.

Which costs less?

In Tanzania, raw sweet potatoes are usually cheap at the market, often cheaper per kilo than Irish potatoes. But sweet potato fries take more work at home: peeling, careful cutting, coating and close watching. Ready-made frozen potato fries skip all of that and give a predictable result. For a restaurant, regular fries are cheaper per portion once you count labour, waste and failed batches. See chips cost per plate.

Which is better for children?

Both can be part of a child's balanced diet. Sweet potato fries add vitamin A, and their sweetness appeals to many children. Regular fries are the familiar favourite. For either, choose oven or air fryer cooking, keep portions to about 80 to 120 g, and serve with protein and vegetables. Our weekly family meal plan shows how to fit fries into balanced family dinners.

As an extra, they can work well, especially in cafes and places with health-conscious customers. Price them higher than regular fries to cover the extra cost and slower cooking. Keep regular fries as the main product: they are faster, more consistent and what most customers order. Can you buy frozen sweet potato fries?

In some countries, yes, but they are less common and usually more expensive than regular frozen fries. Sweet potato fries are harder to produce well because of their higher sugar and moisture, which make them brown quickly and soften. If you want them at home, the simplest route is to make your own and freeze them: see how to make frozen fries at home, which includes a sweet potato variation.

How do you run a taste test at home?

The best way to decide is to try both side by side. Cook a portion of regular frozen fries and a portion of homemade sweet potato fries using the same method, ideally the oven or air fryer at 200°C, so the comparison is fair. Season both with just a pinch of salt. Serve them with the same sauces, such as ketchup and garlic mayo, and ask everyone at the table to rate crunch, taste and how filling they feel. Most families find regular fries win on crunch and sweet potato fries win on flavour variety. Many decide to keep regular fries as the everyday choice and make sweet potato fries as an occasional treat. For dips that suit both, see 10 dipping sauces.

Can you serve them together?

Yes. A mixed basket of regular and sweet potato fries looks colourful and gives guests a choice. Cook them separately, because sweet potato fries cook faster and burn more easily, then combine them just before serving.

In short

Sweet potato fries and regular potato fries have similar calories when cooked the same way. Sweet potato fries have much more vitamin A (from beta-carotene) and a little more fibre and sugar; regular fries are crispier, easier to cook evenly and cheaper. Neither is a health food when deep fried. How you cook them, and how much you eat, matters more than which potato you choose.
