A friend from the village brings you a whole sack of potatoes. It is a kind gift, but there is no way your family can eat them all before they start to sprout. What if you could turn them into your own frozen fries, ready for any night of the week? You can, with nothing more than a pot, some trays and your freezer.
Making your own is a good way to use a sack of potatoes before they spoil. It takes about an hour of work, plus freezing time. Here is the method, step by step.
What do you need to make frozen fries?
- 2 kg firm potatoes (Irish potatoes, viazi mviringo)
- A large pot of water
- 2 tsp salt and 2 tbsp white vinegar (for about 2 litres of water)
- A sharp knife or chip cutter
- Clean kitchen towels
- Baking trays that fit in your freezer
- Freezer bags or airtight boxes, and a marker for the date
Step 1: Choose good potatoes
Pick firm potatoes with smooth skin, and avoid any that are soft, sprouting or green. Green patches should not be eaten. Floury potatoes with more starch and less water make the fluffiest, crispest chips. Tanzania's highland potatoes are well suited to chips: read why Southern Highlands potatoes make great fries.
Step 2: Peel, cut and soak
Wash and peel the potatoes (or leave the skin on for skin-on fries). Cut them into strips of the same size, about 10 to 12 mm thick, so they cook evenly. Put the strips straight into a bowl of cold water and soak for 30 minutes, changing the water once. Soaking washes off surface starch so the fries do not stick together.
Step 3: Blanch with salt and vinegar
Bring a large pot of water to the boil and add the salt and vinegar. Drain the potatoes and lower them into the boiling water. Blanch for 3 to 4 minutes, until the edges are just tender but the fries still hold their shape. Do not let them go soft.
- Salt seasons the potato all the way through.
- Vinegar helps the fries keep their shape so they do not break up in the water.
- Blanching partly cooks the inside for a fluffy centre, and stops the potatoes turning grey in the freezer. Learn more about blanching.
Step 4: Dry them completely
Lift the fries out gently and spread them on clean towels in a single layer. Pat them dry and leave them for 15 to 30 minutes, until the surface is dry to the touch. This is the step most people rush. Wet fries freeze into one block, collect ice and spit when they go into hot oil.
Step 5: Freeze them on a tray
Spread the dry fries on baking trays in one layer, not touching. Put the trays in the freezer for 2 to 3 hours, until the fries are frozen hard. Freezing them separately first means they stay loose in the bag, so you can shake out one portion at a time.
Step 6: Pack, label and store
Tip the frozen fries into freezer bags or airtight boxes. Squeeze out as much air as you can, seal, and write the date on the bag. Keep them at −18°C or colder and use them within 2 to 3 months for the best taste. Our guide to storing frozen fries has more freezer tips.
How do you cook homemade frozen fries?
| Method | Temperature | Time (from frozen) |
|---|---|---|
| Deep fryer | 175°C | 4 to 6 min, until golden |
| Air fryer | 200°C | 15 to 20 min, shake twice |
| Oven | 220°C | 20 to 25 min, turn once |
Do not thaw them first. Cook in small batches and stop when they are golden, not dark brown (see why golden is better). Full tips are in how to cook frozen fries.

Order on WhatsAppIs it worth making your own frozen fries?
For a family with spare potatoes and a free afternoon, yes. For a busy home or a food business, it takes a lot of time: peeling, cutting, blanching, drying and freezing a few kilos is an afternoon's work, and home freezers freeze more slowly, so the texture is not always as even. That is where ready-made frozen fries save time. Read frozen fries vs fresh-cut chips to compare.
What mistakes ruin homemade frozen fries?
- Uneven cutting. Thin pieces burn while thick ones stay raw. Use a ruler for the first few, or a chip cutter.
- Skipping the soak. Extra surface starch makes fries stick together and brown unevenly.
- Over-blanching. Soft, falling-apart fries cannot be fixed. Test one piece after 3 minutes.
- Packing them wet. Water turns into ice, the fries freeze in a block and spit in hot oil.
- Freezing straight in a bag. Without tray-freezing first, you get one solid lump.
- Leaving air in the bag. Air causes freezer burn and dry, white patches.
- Thawing before cooking. Always cook from frozen.
How much can you make in one session?
A comfortable home batch is 2 to 5 kg of potatoes, which fills two or three baking trays at a time. Freezer space is usually the limit: each tray needs a flat shelf for 2 to 3 hours. If your freezer is small, work in rounds: freeze one set of trays, bag them, then freeze the next. Write the date on every bag. Five kilos of whole potatoes usually gives a little under four kilos of fries once peeled and trimmed, so plan for some loss.
What variations can you try?
| Variation | What to change |
|---|---|
| Skin-on fries | Scrub well instead of peeling; blanch the same way |
| Thin fries | Cut to 6 to 8 mm; blanch only 2 minutes |
| Wedges | Cut into wedges; blanch 5 to 6 minutes; bake to cook |
| Spiced fries | Freeze plain, add seasoning after cooking |
| Sweet potato fries | Blanch 2 minutes; dust with a little cornflour before freezing |

How do you keep the process hygienic?
Wash your hands, boards and knives before you start. Use clean water for soaking and blanching, and clean, dry towels for drying. Work quickly so cut potatoes do not sit at room temperature for hours. Once blanched, cool the fries and get them into the freezer within about an hour. Label bags with the date, and keep your freezer at −18°C. These are the same habits we recommend in food safety for chips vendors, and they matter just as much at home.
How does homemade compare with buying frozen fries?
| Homemade frozen fries | Ready-made frozen fries | |
|---|---|---|
| Time | 1 to 2 hours plus freezing | None |
| Waste | Peels, trimmings, bad potatoes | None |
| Even cut | Depends on your knife skills | Same every pack |
| Keeps for | About 2 to 3 months | Up to 12 months |
| Best for | Using a surplus of potatoes | Everyday cooking, busy homes, businesses |
Both have their place. If you enjoy the process and have potatoes to use up, homemade is satisfying. If you want chips on a busy weeknight, a ready-made pack saves the afternoon. Read the Supa Fries 2 kg pack guide to see what one pack gives you.
Once you have tried it, you will understand why ready-made frozen fries are popular: the method is simple, but it takes time. Enjoy the process on a free afternoon, and keep a ready pack in the freezer for busy days.

Frequently asked questions
Why add vinegar when blanching fries?
A splash of vinegar in the blanching water helps the potato strips keep their shape, so they do not break up or go mushy.
How long should you blanch potatoes for freezing?
About 3 to 4 minutes in boiling water, until the edges are just tender but the fries still hold their shape.
Can you freeze raw potatoes without blanching?
It is not recommended. Raw frozen potatoes often turn grey, watery and grainy. Blanching keeps the colour and texture.
How long do homemade frozen fries last?
Best within 2 to 3 months at −18°C, in a well-sealed bag with the air squeezed out.
Do I need to thaw homemade frozen fries before cooking?
No. Cook them straight from frozen, in small batches, until golden.
Can I make frozen sweet potato fries at home?
Yes. Blanch for about 2 minutes, dry well, dust lightly with cornflour, tray-freeze and bag. Cook from frozen at 200°C.
Why do my homemade frozen fries stick together?
They were either still wet when frozen or not tray-frozen first. Dry them completely and freeze in a single layer before bagging.
How many kilos of fries do I get from 5 kg of potatoes?
Usually a little under 4 kg, after peeling and trimming.
